2005 Cave B Cabernet Sauvignon

The 2005 vintage of our Cave B Cabernet Sauvignon represents a first for Cave B. This vintage offered such extraordinary varietal character in this wine that for the first time we have bottled a 100% Cabernet Sauvignon. In the past This Varietal always benefited from judicious additions of Merlot but for the 2005 vintage the best wine came from a 100% Cabernet with the blending actually consisting of simply varying amounts of Cabernet from our 3 estate Cabernet vineyards. With massively rich aromas this wine presents itself with the earthiness of tobacco leaves and leather. The dried plums on the nose give way to hints of Maron Glacé (Candied chestnuts) and just a touch of Cocoa. Flavours of rich plum jam come at you then little bits of cranberries, ripe black currants, and macerated cherries jump into the mix. The healthy tannins and balanced acidity found in this wine certainly make it a great choice for some cellar aging. Or enjoy it now paired with rich red meats.
